Juan Carlos Gutiérrez-Colosía is the winemaker and owner at Gutiérrez-Colosía. one of the finest Sherry producers in Spain. His wife, Carmen, and their daughters Carlota and Carmen are all involved in one aspect or another of the business. “My father taught me the secrets of nursing Sherry,” Juan Carlos said. “Now I am passing these along to my children.”

Making great Sherry is not easy: There’s harvesting, fermentation, fortification, aging (solera), bottling and myriad decisions at every stage. Gutiérrez-Colosía is blessed with not only with deep family knowledge but the geography of its bodega. It is located on the Bay of Cadiz in the south at the precise point where the Guadalete River runs into the bay. This is a magical spot —prime architectural terroir. The humidity of the water, the moderate temperatures, and the saltiness of the air ensures that that flor — the yeast on top of the wine as it ages, the source of the flavor — remains active, robust and diverse.

The many varieties of Sherry produced by Gutiérrez-Colosía reveal exquisite balance and complexities that make them remarkably versatile and brilliant matches for a wide range of food.
