Almaroja, 'Pirita' Blanco

Charlotte Allen, owner and winemaker of Almaroja, farms the grapes for her wines in Arribes del Duero, the only denominación de origen in Spain that is entirely within a national park.

The Pirita Blanco spends 2-3 days undergoing a pre-fermentation maceration, followed by a fermentation in temperature-controlled stainless steel tanks. The wine then spends six months on its fine lees in tanks before being bottled without fining or stabilization, but with some clarification using betonite clay. 

Pirita [pee-REE-tah] comes from the Spanish word for pyrite, also known as 'Fool's Gold' for its similarity to gold.
