Fento 'Ollo de Sapo'
(From the same visionary winemakers that brings us the Bico da Ran Albariño and the Xabre Mencía, Ollo de Sapo is a Mencía from the subzone Ribeiras do Miño in Ribeira Sacra made by Eulogio Pomares and his wife Rebeca Montero.
In 2012, the couple launched Fento to showcase the terroir of Spain's west coast. Working with indigenous grape varieties using natural viticulture techniques, the couple create wines that speak of the regions´ weathered, granite soils and the influence of the cool Atlantic climate.
This is a young red wine, hand harvested and fermented in temperature-controlled stainless steel tanks before bottling. Ollo de Sapo is brand new to the United States and Vinovi & Co. is the exclusive importer.
Ollo de Sapo is a type of metamorphic rock that predominates in the soil, which gives it the appearance of a 'frog's eye', or an 'ollo de sapo'. This is due to the presence of large crystals such as quartz.
