Ca N'Estruc Negre
The Ca n'Estruc Blanc is a blend of Syrah, Ull de Llebre (Tempranillo) and Garnatxa Negra, all from various plots ~500 feet above sea level in alluvial clay soils with gravel. The vines are between 25 to 40 years old, and are farmed ecologically and biodynamically.
The grapes for the Ca n'Estruc Negre were harvested by hand, followed by destemming and a 10-15 day fermentation with native yeasts in temperature-controlled, stainless steel tanks, and with daily pourovers. Once fermentation is finished the wine is racked and undergoes spontaneous malolactic fermentation, also in temperature-controlled, stainless steel tanks.
