The grapes for this 100% Xarel·lo are harvested by hand from vines grown in limestone soils at 2,000 feet about sea level. They are fermented with indigenous yeasts in stainless steel tanks, and are left on their fine lees for three months, with batonnage occuring twice a week.
Xarel·lo is an indigenous grape variety found in Catalunya, and widely known as one of the key grapes in Cava wines. Can Sumoi is the name of the estate on which this Xarel·lo is farmed. The estate itself dates back to 1645.
