Coto de Gomariz, 'The Flower and the Bee', Treixadura

"The bees that carry out the pollination of the flower of the vine are the starting point of everything in the vine and in Gomariz. It expresses like no other the queen grape of the Ribeiro: Treixadura. It is an aromatic wine, very balanced, with structure in the mouth and an exquisite freshness."

-Inma Pazos & Miguel Montoto, Coto de Gomariz

The Treixadura for the Flower & the Bee is hand harvested, followed by destemming and a soft pressing. The free-run juice is settled and fermented at a low temperature in stainless steel vats using wild yeasts. The wine rounds out in tanks until it is bottled on a Flower Day according to the biodynamic calendar.

Treixadura [tray-sha-durr-ahh] is a white grape, the "jewel of the Ribeiro." It sprouts and ripens slowly, therefore it is sensitive to altitude. It is grown mainly in valleys and slopes which are well-orientated.
