Pardevalles, 'Gamonal'
Made from 100% Prieto Picudo, the grapes for this wine originate from Pago El Gamonal - the vineyard for which the wine is named. Hand harvested in boxes of 15 kg, Gamonal undergoes a cold maceration for four days, followed by a fermentation with the skins in 150 hectoliter (15,000L) tapered stainless steel vats at a constant temperature of 26 °C (78.8°F).
The wine undergoes malolactic fermentation in vats, and is then aged for twelve months in 225-liter oak barrels, 60% of which is French, and 40% of which is American. The barrels are stored in the family vaults underground, as they have been for more than 300 years.
