The 90% Tempranillo and the 10% Graciano for the Pies Rotos (formerly the Pies Negros) was sourced from 15 different plots of Ábalos. The grapes are hand-harvested and destemmed before fermentation takes place in 12k liter stainless steel tanks. The wine undergoes full malolactic fermentation in stainless steel, with 15% in new oak barrels. Pies Rotos is then aged between 11-13 months in a combination of 225 and 500 liter French oak barrels, before being bottled after a soft filtration and without stabilization.
