The grapes for this white blend are four native varietals: Malvasia, Macabeu, Moscatell and Parellada, which were harvested by hand, and farmed biodynamically and organically. The grapes were pressed in the cellar and left to ferment spontaneously with indigenous yeasts and without the addition of sulfur. The name Perfum is a reference to the intense aromatics that come from a combination of the native grapes and the high altitude at which they are farmed.
