Celler Casajou 'La Teixonera'
"The little vineyard that made us dream."
The Garnatxa Negra used to make La Teixonera comes from a tiny, one acre vineyard planted in 2015 in Torrelavit. The fruit is hand harvested and goes into a cold tank for two hours before being bled into stainless steel tanks for fermentation. The wine remains in stainless steel tanks for a year. A second fermentation is induced using the must from the following year's La Teixonera. La Teixonera ages for two years in the bottle before disgorgement.
